Though not many people outside Sicily are aware of the fact that between June and September, during the long and warm Palermian summer, the queen ricotta must pass the sceptre to the king gelo di mellone, a quintessential watermelon pudding made with fresh watermelon juice and garnished with jasmine flowers, cinnamon, chocolate and pistachio crumbs.
